Breakfast Eggs with Crispy Chilli Oil

Add vegetable oil to frying pan and bring to medium high heat

Crack the eggs into the frying pan and cook until the whites are firm and crispy but the yolks remain runny.

Remove excess oil from pan and then add butter, once butter has melted use a spoon to baste the eggs.

Move the eggs to serving plate, top with crispy chilli oil & coriander.

Server with toast or crispy roti.
